I just came back from a week long trip to St. Louis for a theatre conference. If you don’t know theatre people, they love to drink. Ever since I started eating healthy and exercising, I’ve only been drinking 1 glass of wine every few months. While I was away, I drank between 1-2 glasses of wine every night. I am now feeling the effects of that, as well as eating lots of nut flour products and not getting my standard 8 hours of sleep. Luckily, my UC symptoms are still very minimal like they were before I left. But my body just feels gross. I woke up yesterday morning having not done yoga or any major exercise in a full week. The first thing my body craved was a big ol’ smoothie bowl.
This bowl was so incredibly filling, and I felt energized for the rest of the day. It fueled me getting through an hour of Yoga with Adrienne, which let me tell you guys, was NOT pretty. I am never going to let myself skip a whole week of exercise again. It’s like my body forgot I was in good shape over the course of the week!
Anyway, this bowl is packed with lots of vitamins and nutrients, and it wasn’t too sweet. I am very careful not to load my smoothies with fruit, since too much sugar is a huge trigger for me. This combo was just the right mix, and was soooo thick and creamy. If you’d rather drink this as a smoothie than eat it with a spoon, just add more almond milk!
Berry Green Smoothie Bowl

- ½ avocado
- 1 frozen banana
- ½ cup frozen blueberries
- 4 frozen strawberries
- ¾ cup califia vanilla unsweetened almond milk or other nut milk
- 2 handfuls fresh spinach
- 1 teaspoon creamy almond butter (I used Barney Butter)
- Cacao nibs, fresh fruit, nuts, hemp seeds, etc. for toppings
Instructions
Add all ingredients to your blender (I have a Blendtec. You will want to use a high speed blender for this otherwise it may not blend completely and you may need to add more almond milk)
Pour into a bowl and top with toppings of your choice and serve! Yum!
Notes
This can serve 2 people easily depending on how hungry you are. If I am going to have a super long day, I would drink the whole thing. If not, half usually fills me up plenty. It's a BIG smoothie.
